Butter’s BBQ in Sinton, Texas, is grappling with a significant rise in beef prices. Owner Andrew Soto, who runs one of the state’s top 50 smokehouses as listed by Texas Monthly, has discovered that brisket alone is consuming 70 percent of his total grocery expenses.
Recently, the wholesale cost of brisket jumped by $1 per pound. This increase is substantial, especially in a period marked by high beef prices nationally. Soto calculated that to maintain brisket on his menu, he would need to charge $51 per pound.
This situation reflects a broader issue affecting BBQ restaurants across the country, forcing owners to reassess their pricing and menu strategies.
