Grace Pak, a New York City cake artist accustomed to the spotlight of Food Network competitions and lavish weddings, embarked on a unique culinary venture. When she discovered that no official cake was planned for the United States’ semiquincentennial celebration, she took the initiative to create one.
Since January, Pak has been dedicated to realizing this ambitious project. Her creation, a sculptural cake as large as a Mini Cooper, features artistic representations like chocolate Black Hawk helicopters, an eagle, and Lady Liberty’s torch made from Rice Krispies Treats and green fondant. Designed to embody national unity, the cake is set to be unveiled at the Library of Congress on Saturday.
Despite her expertise, Pak encountered unexpected challenges while crafting this monumental cake. The cake’s creation became entangled in the broader political climate, reflecting the divided opinions of a nation. Pak noted, “It’s the 250th, and I feel like so many people are not excited. The current political situation overshadows excitement.” Her hope is that the cake can serve as a unifying symbol—at least for a moment.
Throughout the week, Pak has spent late nights perfecting her vision. As a reflection of America’s history and identity, her artistic choices evolved over time. Although politics added complexity, her determination to create a symbol of unity remained steadfast. Pak believes in the power of cake to bring people together: “Bring cake and everyone’s in.”
