Reflecting on America’s Bicentennial Celebrations and a Timeless Cookie Recipe

The Fourth of July celebrations today seem less grand compared to those of the 1976 bicentennial. Back then, the festivities left a remarkable impression, especially for those who experienced them firsthand. Despite the usual weather challenges, community parades continually display vibrant patriotism, bringing smiles to people of all ages.

As a child, I witnessed the 1976 celebrations vividly. Our visit to Walt Disney World that year marked an unforgettable experience. Designed by Walt Disney, the Magic Kingdom in Florida featured patriotic themes that impressed visitors. An entire section, Liberty Square, was dedicated to U.S. history, and the Hall of Presidents attraction opened on October 1, 1971.

The bicentennial celebrations at Disney featured themed parades and costumed characters. My mother captured many of these moments. One float, which represented an American eagle, included Disney characters like Mickey Mouse, Donald Duck, and Goofy dressed as the “Spirit of ’76” trio. This costume referenced Archibald M. Willard’s 1876 painting.

Currently, Disney’s tributes to America’s milestones are less elaborate but still occur. Their efforts include special fireworks and parade features.

In the spirit of tradition, a molasses cookie recipe from Walt Disney Resorts is shared below in homage to Margaret Kerry, the model for Tinker Bell. Kerry passed away recently at the age of 97.

Neverland’s Molasses Cookies Recipe

This recipe yields 2 dozen cookies.

Ingredients

  • 1 stick margarine or butter, softened
  • 1/2 cup sugar
  • 1/2 cup light or dark molasses
  • 1 egg
  • 3 cups sifted all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • Margarine (for greasing cookie sheets)

Directions

  1. Preheat the oven to 375 degrees. Grease two cookie sheets lightly.
  2. Cream margarine in a large bowl until soft and fluffy.
  3. Add sugar, molasses, and egg, mixing thoroughly.
  4. Sift together flour, baking soda, salt, and cinnamon. Gradually add to the mix while blending well.
  5. Shape the dough into a round, wrap it in wax paper, and chill for 2 hours.
  6. Roll out dough on a floured surface to 1/8 inch thickness.
  7. Cut out cookies and place them on the sheets, spaced apart.
  8. Bake for 6 to 8 minutes.
  9. Use a spatula to transfer cookies to wire racks for cooling.
